2017 06 30 - slow cooked carnitas

3-5 lb / 2.5 kg pork shoulder (pork butt)
bone-in is cheaper and nice
boneless will come tied with string and weigh less ..whatever

1 onion, chopped
2 tsp onion powder
yes both shut up

4 cloves garlic, minced
1 teaspoon garlic powder
yes both shut up

1-3 tsp dried oregano
1 tsp ground cumin - less is more here - love the cumin but 2 was too much

2-3 teaspoons chili powder
1/2 teaspoon cayenne pepper
1 jalapeno, deseeded, chopped    extra unneeded heat - try again on next batch

1/4 teaspoon ground cloves - seriously ... too much and ewwwwwwwwww
2 teaspoons ground coriander - amazing spice

1 tsp black pepper
2 tsp salt

2 cups bacon fat (you dont need to cover the meat ... but 3/5ths
( a pound of butter would work, vegetable oil or another fat ...)
THIS sounds insane ... but you are not going to drink it.
Water ... water dries this out too much.

1) brown setting on slow cooker - HIGH (400f)
Brown all sides ... do this while measuring spices.
you cant burn it, go crazy

2) add spices and fat to crocckpot

3) low heat 8-9 hours
high heat 4-5 hours

How do you KNOW that it is done?
Meat should fall off the bone. Should shred with a fork.


Serve:
On tacos with onion bits and celantro
Over rice
or do atkins and lose weight ... double portion with nothing else
